The Easiest Southwest Scrambled Eggs (Bonus: 2 recipes!)

Eggs are not my favorite food. I actually used to hate them, and I rarely ever eat them plain. Anybody else with me on this one?!

But, I know eggs are better for you than cereal, so alas, I cook the eggs.

I typically try to hide the eggs flavor with loads of sauteed veggies + cheese, which does the job. However, that can get really tiring to my pallet very quickly.

Also, I am one of those people who puts ketchup on her eggs… Literally, anything to get the flavor to be different! When I have it on hand or I am feeling fancy, I will slap some salsa on top of my fancy veggie eggs. One morning as I was prepping my eggs, I pulled the salsa out and had a grand idea: instead of putting salsa on top, what if I cooked the salsa in with the eggs? Thus, this recipe came to fruition. The Lazy Southwestern Eggs

Serving size: 1 person
Prep Time: 2 minutes
Cook Time: 4 (or so) minutes


  • 2 eggs
  • about 2-3 tablespoons of salsa
  • a handful of sharp shredded cheese (your preference)
  • salt + pepper to taste
  • 1/2 avocado



Yep, this is now my go-to quick scrambled eggs! The flavor is so good, and the recipe is so simple that I feel like I can hardly call it a recipe!


Now if you’re feeling fancy…

Southwestern Eggs with all the Fixin’s

Serving size: 1 person
Prep Time: 6 minutes
Cook Time: 10 (or so) minutes


  • 2 eggs
  • 2 tablespoons of onion, diced
  • 1 handful of spinach
  • 2 sweet mini peppers, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of oil (I use grapeseed)
  • 2 tablespoons of salsa
  • a handful of sharp shredded cheese (your preference)
  • salt + pepper to taste
  • 1/2 avocado



  • Beat your eggs, salt, and pepper in a bowl
  • Grab your nonstick skillet
  • Put on medium-high heat with the oil + let it heat up
  • Sautee onions + peppers
  • When onions + peppers are soft, add the spinach + salsa and stir
  • Finally, add your minced garlic and sautee until fragrant
  • Pour in eggs and mix for 3 or so minutes
  • In the last 30 seconds before you are ready to eat, put in cheese and mix until melted
  • Plate + top with avocado!

This way is super good as well and packed with more veggies! However, I don’t always have the time (or patience) to make these in the morning!


Serve with a side of fruit to balance out your happy breakfast!
